1. Prepare the Sushi Rice
Begin by cooking your sushi rice following the instructions on the packet. Once cooked, let it cool to room temperature. Properly cooked rice is the foundation for great sushi, so take your time with this step.
2. Cut the Nori Sheets
Carefully cut your nori sheet in half, creating two equal halves.

Lay a piece of cling film on a flat surface and place one half of the nori sheet on it. Spread a layer of cooked sushi rice onto the centre of the nori, shaping it into a narrow rectangle. Roll the sushi tightly in the cling film, then pinch one side to a point, creating the tapered end resembling a ghost's tail. Repeat this step with the other half of the nori sheet leaving you with two rolls of rice in cling film both with a pointed side.

Remove the sushi rice rolls from the cling film. Place each roll onto the centre of the remaining nori sheet halves. Using a brush I lightly brush water on each side of the nor sheet making it easier to wrap around the peaked rice.
5. Create the Ying-Yang Shape
Lay out another nori sheet and position your two half-sheet rice rolls, one with the pointed end facing down and the other with the pointed end facing up. This arrangement will create a yin-yang shape, adding a touch of harmony to your spooky sushi.
6. Seal the Rolls
Using a brush, lightly moisten the nori sheet with water to make it more pliable. Carefully wrap the nori sheet around the two rolls, pressing gently to seal the edges and form a complete sushi roll.
